Curried Rice and Spam

Yield: 8 to 10 servings.
Ingredients:
2 cups cooked rice
1 cup fresh or frozen peas, cooked
1 cup thinly sliced celery
4 green onions, sliced
1 (12-ounce) can Spam Classic, diced
1 cup mayonnaise
2 tablespoons granulated sugar
2 tablespoons lemon juice
1/2 cup prepared chutney
1 1/2 teaspoons curry powder
Directions:
In a large mixing bowl, combine rice, peas, celery, onions and Spam. In a small mixing bowl, combine mayonnaise, sugar, lemon juice, chutney and curry powder. Add to Spam-and-rice mixture; stir well. Chill before serving.
